Sauerkraut

Bill and I tried our hands at sauerkraut for the first time yesterday. It's too soon to tell if we've got it right or not, but thought I'd share a few pics and say thanks to Jen for her awesome thread on making sauerkraut with winemaking equipment that finally got me up and running. ;) By the way - the pic pf the bucket only shows it about 1/2 full. Our 6 gallon bucket is about 2/3 of the way full now, which took about 32 lbs of shredded/sliced cabbage to achieve. ;)… Continue

Wine Update

After a minor scuffle with the siphon tubing, Bill & I managed to rack & re-rack both of our wines in progress.

The rhubarb is a lovely light salmon pink and has a light, sweet taste. It unfortunately got a bit stirred up during our struggles during the racking progress, and is not as clear now as it was.

The wild cherry is deep garnet and STRONG! When I first popped the lid off of the primary (a big plastic bucket) the smell of yeast and sweet, boozy cherries just about knocked me ove… Continue

Staying busy...

Yesterday was a very productive day in the kitchen, thanks to the garden.

I made my first batch of tomatillo salsa from our tomatillos. Yum! I also tried my hand at cherry wine for the first time, using 5lbs of the wild dark cherries that Bill and the girls picked back in July. It smells like heaven! :)

To date, we have grown/harvested/foraged nearly 50 pounds of produce from our little yard and neighborhood this year!

Hi Chelle! Did you hear? One of Diana's chickens has laid her first eggs!
Her chickens are about 18 weeks old, so maybe you and I will be getting eggs soon! I hope so, cause I'm ready! The cost of eggs in the store has dropped, and that's good, but I'm really ready for my own eggs.

Chelle, thank you for your your kind words about my 'knowledge'. I know enough, but I've learned much more from John. He's the one who knows so much. I always ask for his input on the tougher KGI discussions, and he usually has an immediate understanding of what to do. I always do research on the internet to back up what I post, and John always checks facts too when he's advising me. In a web community like this it's really easy for some folks to dominate. I love participating in the discussions, but I try to share info without sounding like a know-it-all (because I certainly don't know it all). And I really learn a lot by researching a topic when a new discussion opens. It's a blast how much I'm learning on this site!! Again, thank you.

Yes, I have been home winemaking for about 4 years or so now. I would love to help you guys get started. It is actually pretty easy...espescially my semi-slacker way! I started out with all the goodies, and sulphites and everything, and then graduated to just good old soap and hot water--which gives a much better flavor to the wine. I have made many different kinds, but I mostly use fruit or flowers. I made a lot of dandilion last year and some rose petal, and concord grape. I have also made a rosehip (yum), peach (really yum), nasturtium (weird), and some others, some that didn't work out as well due to a learning curve. It's espescially good if you forget about it for a year, then remember it and drink it. :) Let's do it!

Hi Chelle. I really like all your photos, especially those with your daughter helping out. It's always nice to have family pitching in on projects. Although, actually... sometimes it isn't, when I think about my family! lol! I really like your chicken coop too. That's very similar to what I want John to build as a winter home for our chickens, only larger because we have 25 chickens. He and I don't often see things the same when new projects come around, so we'll see what we end up with! Have a beautiful day!

It's from this month's KGI book of the month club--Eugenia Bone's Well Preserved. It's an amazing book--not much quantity, but incredible quality!

There is a balsamic recipe in the Ball home canning recipe book (not the blue book, the other--though it might be in the blue book as well).

I'm dreaming about cherries next...I love them but they are SO expensive in the store. I guess I'd need a cherry stoner too, if I am really going to do it.

Awesome! I canned for the first time this weekend too--strawberries of course. I got 7 cups of strawberry jam, 2 pints of strawberry-balssamic, and a pint of strawberry balsamic syrup. I will blog soon, when work lets up a bit!
