Just a month ago i pickled some shallots. I,ve just had some tonight with my fish & chips. They were great, nice and crunchy. I skinned all the small ones, [under 3/4"] and soaked for 24 hours in salt solution. After 24 hours i washed them and dried…

I made some fantastic pickles a couple weeks ago (I'm going to get to the other veggies soon) which are almost all eaten! However, the pickle juice was so good that after finishing off a jar, we hard boiled a batch of eggs and put those in the "left…

Here is a recipe we made up this year. We had lots of garlic scapes and wanted to preserve some. Pickled Garlic Scapes garlic scapes hot peppers thyme honey vinegar This is a very flexible recipe and can be fitted to whatever size jar you want to…

I agree about the hot water bath and usually use it only if the jars don't seal correctly. I often use a vacuum sealer to quickly seal the jars. Sugar is also not my preference due to taste and health reasons. I tend to like pretty spicy foods. Mayb…

I love them for snacks, in a salad, and as a side dish. Blanch them, chill them, and trim to fit into pint jars with about an inch of head space. Pack the trimmed beans tightly into the jars; put the trimmings into other jars to use as an addition t…

Green beans are wonderful to pickle. I have used a dilly bean recipe and last year I did bread and butter green beans. I just followed the regular b&b recipe, but put in green beans instead of cucks. I have also done dilly pea pods and zucchini brea…

Hi there. I've never pickled green beans. I really wanted to this year. I love the idea of Dilly Beans. But I haven't gotten any beans this year, in spite of planting many. I have been pickling many other veggies however - giardiniere (mixed veggies…

KG Day - Help us choose a date!

Kitchen Garden Day has traditionally been celebrated at the end of August which is a great time for gardens in temperate, northern climates but not a great time for many other gardeners around the world (e.g. August is winter in the southern hemisphere, monsoon season in India, too hot for many gardeners in southern states, etc.).

We're exploring the possibility of changing the date to the spring and would like your input. Please answer our poll here.

I think this might need it's own category, don't you? Tomatoes are one of the most popular things to grow and we've been placing them in all kinds of groups, but the fact is we almost all grow them, and they have specific needs.

HOW TO - ADD A LINK

Several people have experienced difficulty putting working links into comments and blogs etc and I know it is clumsy.... so here is how you do it.....

First type the text you want to appear....  ie  IAN'S PAGE

Then go back and highlight the link text.

Then hit the hyperlink button...a pictogram of a chain link.

Your browser may intervene and request permission to allow temporary scripting or some similar message.   Allow it and go back and highlight the text again

Forum Policy

Hi, I'm starting to put together a few guidlines on using the discussion forum on here.

I would be happy to hear any comments you may have.  This is very much a work in progress so plese feel free to ask me to add anything you think is needed.

I don't want to make our community hide bound by rules and regulations but I think that, as the community has grown, some explanation of what is expected is needed.

Hi Everyone,  I've started to collect together recipes from various posts on the site and put them all together here.
